When I ordered this, I wasn't entirely sure what the difference was between their standard tonkotsu broth and the shio version. But it became very obvious upon my first slurp: whoa, that salt made it so bright and savory, and I loved it. The paper thin chashu was fun, as were my extra hard noodles, even if I didn't care that much for the menma. The tabletop pepper was nice and punchy, while the spicy mustard greens had a nice stank to it. I've been taking Ikkousha for granted for too long and really should go back more often.
