Here's PSJ's Cowboy Pho again, which now is written on the menu as PSJ Smoked Brisket Phở instead of Texas Style Phở. Anyway, I tried some of their other options today, in particular the "fresh" noodles, which turned out to be the soft kway teow that is commonly used in Singapore. I'm definitely reverting back to the skinny reconsistituted noodles next time.
I'll also pass on the béo hành fatty scallions as it hardly made a difference, and I should also specify the chopped tái băm trứng with egg next time instead of just "rare steak," which ended up getting me sliced tài riêng. Finally, I need to remember that they default to a large bowl unless you specify a small one, and that the bean sprouts are blanched; there was even steam billowing from the pile that they gave us.
