Three Michelin-starred restaurants aren't really my thing. But a teammate made a reservation here for a business lunch today, and it wasn't hard to convince me to accept, especially when this place was also ranked number one on the Asia's 50 Best Restaurants list (1 Saint Andrew's Road #01-04, 6385-0498).
It's quite fitting that it was in a museum too, since everything was plated like a pretty work of art. It was definitely fine dining, featuring craftsmanship of such precision that there were surely many tweezers used in the kitchen. That soup above featured abalone, shiitake, and foie gras, while the dry ice theatrics in the background helped to showcase a rich rosemary smoked egg that I enjoyed even more. Yes, I liked the food, including not just the extremely high quality local ingredients but also his meticulous approach to contrasting textures.
Such an upscale place meant that the service and decor were there to match, right down to the gorgeous stemware. Fortunately, lunch prices weren't as bad as I thought they would be; even the cheaper four course meal came with an array of amuse-bouche, palate cleansers, and petit fours, so much that we were stuffed.
